After undergoing renovation, the German Bakery will finally reopen by Christmas. The patrons of the Bakery have been waiting for this for more than a year now. The renovation of this popular joint was deferred owing to technical and logistical reasons. It was closed following a bomb blast on February, 13, 2010.
Snehal, the eldest daughter of the bakery owner Smita Kharose said that “Our customers our eagerly awaiting the reopening and we are hopeful of restarting the bakery anytime between Dec 20 and 25. Efforts are on to finish the renovation as soon as possible.”
The renovation of the bakery has been done under the guidance of architect Pramod Purohit. According to the new design, the ground floor, that has an area of 750 square feet, will have the main food counter of the bakery. The first floor has an area of 1,100 square feet and will be used for seating. It can accommodate about 80 to 90 people at a time.
According to the renovation plan, the bakery will have new wooden tables and chairs. The ceiling will also have wooden finishing and paneling. The flooring will be done with wooden and tile finish. Purohit informed that he had done his “bit of designing” and now the others are executing the plan.
The bakery’s opening has been announced many times in the past and was taking place at a very slow pace. Snehal said “It has taken us this long because it wasn’t easy getting the necessary permissions after we got back the possession last year. Also, arranging for the required funds has been a challenge. Even now, we are financially burdened. So far, over Rs 45 lakh have been spent in putting the bakery back together.”
The family was awarded Rs 14 lakh as compensation from the state government. The family was able to procure another 25 lakh as loan. The owners say that after the bakery reopens, they will have the same staff. They plan to introduce table service instead of the self-service that they had earlier. Some members of the staff will soon be joining the bakery when it reopens. Another thing that will remain unchanged will be the menu of the bakery. It will remain the same for at least six months after the bakery reopens. Snehal also assured that they will make “Adequate security arrangements” for their customers.
Snehal also said that there was no conflict between the management and the ownership. She said that her mother retains the ownership and she would be managing it on her mother’s behalf. Their production manager, Wlison Murthy was helping her to understand the management of the bakery. However, the former manager, Gopal Karkee, is reported to have shifted his base to Goa. He plans to open a new hotel there in Vagator. He is said that he will be in touch with Woody Klaus, one of the co-founder of the bakery.
